How to Cook Shoyu Chicken - The Hawaiian Treat

Last year, my husband and I took a dream vacation to Hawaii. We got to tour most of the islands and saw all sides of Hawaii, from Honolulu and the glitzy beach resorts to little towns well off the main tourist track.

Everywhere we went, we could count on finding an ubiquitous dish called shoyu chicken. Sometimes it came served with exotic garnishes, usually in the fancier restaurants, and sometimes it came straight out of the cooker and served on paper plates from some roadside stand, but it was always delicious.

When we got home, I knew I had to try cooking some shoyu in my own kitchen.

There must be thousands of different recipes for this dish. The differences are mainly in the ingredients for the sauce, but even the chicken itself can be cooked any way you like, from boiling in a pot to baking in the oven to grilling on the barbecue.

No matter the recipe, one ingredient you'll always find is soy sauce. That's because that's what shoyu means--soy sauce. If you want, you can just call this dish soy sauce chicken. But I prefer to use the word "shoyu" in tribute to its native home in Hawaii.

If you would like to cook shoyu chicken, why not go all the way and make it the food centerpiece of a Hawaiian-themed party? Break out the leis, put on some ukulele or Don Ho music, and have some tropical fun.

This shoyu chicken recipe serves 12 people. If you want to make it just for your family instead of for a party, cut back the recipe portions accordingly.

Ingredients

12 pounds of chicken thighs

3 cups brown sugar

4 cups soy sauce

4 cans chicken broth

1/2 cup white wine

6 cups pineapple juice

1 cup vinegar

1/2 teaspoon salt

1/2 teaspoon coarsely ground black pepper

1/4 cup Worcestershire sauce

chopped green onion tops

4 cloves garlic, crushed

2 tablespoons ground ginger

2 cans pineapple rings

Directions

1. Wash and drain the chicken thighs.

2. Combine the sauce ingredients (everything listed above except the pineapple rings).

3. Combine the chicken and the sauce in a large pot. Bring to a boil, cooking 30 minutes or until the chicken is tender.

4. Place chicken thighs on serving platter; decorate with pineapple rings and serve.

Teach Your Kids Arithmetic - Fractions, Percents, and Decimals

Admittedly fractions are trouble for most students. In my previous article I talked about why this is so. Percents and decimals too present their share of problems to young students-adults as well. There is an interesting connection between these three mathematical entities and here it is: fractions, percents, and decimals are variations of one and the same thing.

That is correct! These three curious mathematical objects, which go parading around as though they had independent identities, are really one and the same. It's like Clark Kent and Superman: you take off the glasses and suit, and you get Superman. Learn about the personality of one, and you've mastered the intricacies of the other.

When I pointed this relationship out during one of my lessons, one student looked at me in amazement and said that he never realized that. This boy had gone through school for twelve years-he was a senior in high school-and never saw that connection. When I would stress this relationship throughout my different classes, I would get similar reactions from many students: they just never made the connection that linked these three seemingly different ways of expressing a mathematical idea.

Now this is a problem with mathematics education in this country. Connections are not made between topics in this difficult discipline. For this reason, students are left scratching their heads wondering when in the world they will ever use something like a decimal, a fraction, or a percent, even though these basic things are literally encountered everyday. This failure to connect math to reality harks back to questions like "Why are manhole covers round?", which I presented in my article Why Study Math - The Circle

For those educators reading this, they know that a common rebuttal of the math student is "When am I ever going to use this?" In fact, a common gripe I would hear is "This is totally useless stuff." In preparation for these questions, I worked diligently so that I could show students that there actually was a connection-a reason-why they were studying the particular lesson at hand.

For the topic in question-fractions, percents, and decimals-students must be made aware that a fraction is a percent and that a percent is a decimal. Once students know that they are dealing with one and the same thing, and not three separate ones, they feel less overwhelmed from having to know all about percents, all about fractions, and all about decimals. When students now see 1/8, they know that this is a mathematical synonym for 12.5% or 0.125. Similarly 1/4 is 0.25 which is 25%; 3/8 is 37.5% or 0.375; ½ is 50% or 0.5; 5/8 is 62.5% or 0.625 and 3/4 is 75% or 0.75.

As obvious as the previous mathematical synonyms are to those who understand them, these relationships elude many students, and they end up in ignorance, much like the senior of mine mentioned earlier-and this can be a life-long ignorance, unfortunately. Yet once connections like that among fractions, percents, and decimals are made, connections and cross links are made in other areas as well. When this is done, mathematics is no longer the formidable bugbear that many take it to be.

From Party Planner to Brownie Girl Scout Leader

I am proud to announce I am a new Brownie leader for the Girl Scouts of America (GSA). As the Queen of Connection, committed to transforming lives, imagine my surprise to learn the organization's purpose: to have girls discover new things for themselves, connect with them on a personal level, and take action to make the world a better place. I couldn't be happier.

As I was planning my first meeting, imagine again, if you will, my surprise upon discovering that the GSA's suggested meeting structure has six segments, just like my easy six-element approach to planning a great party.

I'm sharing my adventures in Girl Scouting this month from the perspective of a volunteer who is delighted to have found an organization with a vision that matches my own in so many ways. I love the possibility of a world where girls can grow to be committed to being honest and fair, friendly and helpful, considerate and caring, courageous and strong, and responsible for what they say and do; where they can learn to respect themselves and others, respect authority, use resources wisely, and make the world a better place. This is what we teach in Girl Scouts, and we do it in a fun and playful manner. Each meeting is in essence a party filled with fun activities meant to inspire and fill the heart. I am delighted that my work contributes to the lives of 2nd and 3rd grade girls.

Following is my "party plan" for Brownie Meeting #1, as outlined using the GSA meeting structure.

Start-up

Name Tags Tea Lights

Using 3x4 paper inserts, my co-leader and I had each girl make a name tag with brightly colored pens and self-adhesive stars. Once completed, the girls inserted them into plastic sleeves and put them around their necks in preparation for our special guests. Then we moved onto painting glass tea light candleholders. We explained that the candleholders would be used in a ceremony later in the day and then suggested they paint a simple symbol that represents who they are or what it means to them to be a Brownie.

Opening

Snack Leader Introduction Attendance

With name tags on and tea lights drying, the girls ate their snacks. My co-leader and I introduced ourselves and I choose one of the girls to take attendance using a fun feather pen which everyone loved.

Business

Cadets First Aid Game

Our special guests arrived during this portion of the meeting-a troop of Girl Scout Cadets. The Cadets recited the Girl Scout Promise and the Law, and reviewed the Make New Friends song. They also taught our girls the handshake and the important Brownie Smile Song. Then we played a little memory game that I've played at many a baby shower. We removed the contents of the Cadets' first aid kit and placed them on a tray. Once each Brownie had a chance to look at the tray and commit the items to memory, the tray was removed. I wrote the numbers one through fifteen on a dry erase board and then asked the girls to tell me what they saw on the tray. These fifteen items would later make up the contents of our troop's first aid kit. Each girl was assigned one item to bring to the next meeting when our kit would be assembled.

Activity

Sit-upon

In preparation for this Girl Scout tradition, my co-leader and I pre-cut oil cloth into 14 x 36 inch pieces for sit upons. Once folded into a 14 x 18 inch piece, we hole-punched the 3 sides about an inch apart. We also pre-cut carpet padding into 12 x 16 inch pieces making enough for two per sit-upon and coordinating yarn. At the meeting, once each girl chose her materials, they were also given a Butler GUM Threader Dental Flosser to use as a needle. This was our secret tool to making this project easier to accomplish and in less time. Then we simply wrote everyone's name with a Sharpie pen. The girls were so excited about their sit upons that we had to promise to use them at our next meeting!

Clean-up

Clean-up by the girls is an important element to any Girl Scout meeting. Once this was accomplished we moved into our special ceremony.

Ceremony Brownies Assignment Slips

All but three of my girls are returning to Girl Scouts, so for them a "Rededication" Ceremony was in order, my new girls -- an "Investiture" Ceremony. Marrying the two was easier than I thought. I asked each girl to pick up her tea light and line up in a predetermined order.

"If you were a Daisy last year you are participating in a Rededication Ceremony today." I said. "If you are new to Girl Scouts this year, you are participating in an Investiture Ceremony. Traditionally when you "invest" in something, you make a commitment or a promise. As Girl Scouts you have a very important promise that you agree to live by. Each of you has heard that promise spoken by our visiting Cadets and today you are being given the opportunity to invest yourself or rededicate yourself to the Girl Scout Promise and Law in this special ceremony."

I used a long tapered candle to light each girl's tea light while she repeated a line I gave her from the Girl Scout Promise and then the Law. For Example: One girl said, "I will do my best to be honest and fair." Another said, "to be friendly and helpful," and another said," to be considerate and caring," and so on. My co-leader followed behind them adding Membership Stars to their vests and turning their Brownie Pins right-side up. Once all the candles were lit, and with tea lights in their left hands and three fingers still raised on their right, my returning girls gave their promise. I welcomed them back to the troop. Then calling our new girls forward, I asked them to repeat after me as I led them through the Girl Scout Promise. Once completed, I took their tea lights, shook their hands, and welcomed them to our troop. Congratulating our girls, I announced that they were all officially Brownie Girl Scouts and with that, they received a brownie cupcake as they left the meeting.

That was a very busy meeting. In two weeks, we'll enjoy (to quote one of the girls) "sitting upon our sit upons" and taking time to get to know each other. I have to say, the best part of the day was having one of my girls throw her arms around me and say, "You're the best Brownie leader ever!" How awesome was that? Parties filled with heart really do pay off.

1930s: The Steam-lined -Depression Era "Modern Kitchen"

By the 1930's, the kitchen was being transformed from the old fashioned kitchen to the "Streamlined-Modern Kitchen" with time saving features, better organization and much improved ventilation. The "all-electric kitchen" was promoted in popular magazines with numerous advertisements showing newly designed small and major appliances. Mixers were the homemakers dream now designed with numerous attachments that could sift flour, mix dough, grate cheese, squeeze lemons, whip potatoes, shred, slice and chop vegetables and even sharpen knives. "Depression Green" was the "in" color used on the wooden handles of kitchen utensils, on kitchen cabinets and tables and on kitchen wares. Often accessories were cream and green replacing the white and black look of the previous decades.

Other popular color combinations in the 1930s were Gray and Red or Crimson, Silver and Green, Pearl Pink and Blue, as well as the use of checkered patterns on textiles. Kitchen wares such as canisters and Bread boxes tended to be softly painted with perhaps a simple decal.

In 1935 the National Modernization Bureau was established to promote modernization throughout the country. Manufacturers competed for better designed appliances and kitchen accessories. Color began to enter the kitchens of the thirties and articles in magazines featured decorating tips on color schemes and how to incorporate the kitchen into the rest of the home. Kitchens were no longer work stations but gaining as much attention as the rest of the home. Small and large appliances were available in color and Sears and Montgomery Ward featured colorful kitchen wares and "japanned" accessories such as canister sets, range sets, cake savers, bread boxes and waste baskets.

1940s: The Postwar Colorful Era

The Post War kitchen of the 1940's began to become family gathering places and now tables and chairs made of chrome bases with enamel, linoleum or plastic tops could be added to a more spacious kitchen which replaced the smaller work centered earlier kitchens. Separate formal dining rooms were being replaced by kitchens that could accommodate the family and guests. The kitchen was becoming a very inviting space and primary colors dominated the interior décor palette. Magazines advertised products for your "Gay Modern Kitchen". Combinations of red, green and yellow or red and black were popular as well as brightly colored tablecloths, textiles and curtains. Flowers, fruits and Dutch motif were in vogue and found on shelving paper, trim, decals and kitchenwares. Appliances continued to be produced with streamlined designs, rounded corners and smaller proportions. The combination washer/dishwasher was introduced as well as the garbage disposal and freezers for home use.

1950s: The Atomic Era-Pastel Color-Space Age

Dramatic changes would occur in the kitchens of the 1950's as space age, atomic era designs and materials entered the scene. The fifties kitchen featured plastics, pastel colors such turquoise or aqua, pink and yellow (cottage colors), Formica and chrome kitchen table and chair sets matched formica kitchen counters and were easy to keep clean with messy little ones. After the war there was more time for leisure promoting kitchenware's and accessories for picnics, barbecues, parties and the home bar.

The introduction of color T.V. in the 1950s brought full color into America's living rooms where homemakers could now see all the exciting products and appliances available to them. Following World War II, there was a new generation of plastics and time for "gracious living" and entertaining. Kitchens and homes saw the transition from glass, ceramic and tin products to numerous types of plastics which made casual living easier. Melmac and Melamine dishes, Lustro-ware and Tupperware storage accessories and "thermowall" for picnics were a huge success. Vinyl was used for tablecloths, chair covers and furniture and bark cloth with boomerang and abstract shapes was popular. Tablecloths and dishcloths continued to be brightly colored and souvenir textiles were added to the home with tropical, Southwestern and Mexicana themes. Poodles, roosters and designs with kitchen utensils, tea pots and coffee pots decorated potholders, appliance covers and linens. Appliances were built-in and came in fifties colors such as turquoise, soft yellow, pink and copper.

How to Cook Snapping Turtle

Where I grew up in south Louisiana, we saw plenty of snapping turtles, but most of us never thought to eat one. Maybe it's because we were blessed with having so many crawfish around, which were much easier--and less dangerous!--to catch and cook.

Nevertheless, occasionally one of my readers has asked me how to cook a snapping turtle. So, if you happen to find one of these rather nasty looking critters in your fishing net, or have one packed away inside your freezer, here's a great way to prepare it.

By the way, snapping turtle is actually quite delicious!

Assuming you have a live snapper on your hands, the first step, of course, is to kill it. Don some gloves, grab a sharp knife, and cut off the turtle's head as quickly and cleanly as possible. There will be blood, of course, which you should allow to run down the drain of your sink until the flow has slowed considerably.

Now drop the turtle's body, shell and all (except the head, of course) into a big pot of boiling water. Boil for 8 minutes. This is mainly to make cleaning it easier.

Remove the turtle from the pot and allow it to cool sufficiently to be able to handle it. Take your sharp knife and cut away the plastron, or lower shell. Remove the intestines and other organs. Now cut the good stuff, the meat, away from the top shell; be sure to include the legs and tail, which are the best-tasting parts (the skin should come off of these easily after boiling).

You can cook turtle meat, whether from a snapper or some other species, in many different ways. My favorite is this snapping turtle stew:

1. Cut the turtle meat into cubes.

2. Begin browning the meat in a hot frying pan with cooking oil. Add a chopped onion, one or two chopped cloves of garlic and continue cooking until the meat is browned all over.

3. Drain the oil from the frying pan. Remove the meat, onion and garlic and place them in a saucepan (one with a lid). Add 2 cans of tomatoes and 4 sliced or chopped potatoes, some salt and pepper, and enough water to cover everything.

4. Cover the saucepan and cook at a strong simmer for 40 to 50 minutes.

5. Enjoy!

For centuries south Asian region has been rich. Rich with it's spices and food recipes. For years, the region lured various different crusaders to invade the region over centuries. Beginning from the 14th century, the moghuls invaded and ruled, what is today the Indian subcontinent, for over three centuries. And then came the marvelous voyages of Christopher Columbus taking upon the arduous long voyage and Vasco De Gama of Portugal, all because of the lure of rich and vast variety of spices in the sub-continent.

Vast fortunes have been made and squandered, powerful rulers seduced, ailments cured and nations have been discovered. All in the name of spices. Spices have always cast a spell on our imaginations. Spices flatter our senses; our sight with their vibrant colors, our smell with their enticing fragrances and our taste with their distinct unique flavors.

Today, India is one of the largest exporting nation of spices in the world. Vast variety of spices grow due to natural conditions available in various parts of India. The major western, south-west, south and south-east is tropical in weather conditions, north-west, north are dry with less humidity and north-east and east have pre-dominantly high-rainy seasons.

Due to the abundance in availability of spices in India, Indian food is never bland. Most of the recipies originating from the Indian sub-continent contains spices in the list of ingredients. Spices in Indian food are not heavy and although Indian food is not bland, most Indian dishes are delicately spiced to enhance the flavor of the main cooking ingredient. Curry powder sitting on the grocers shelf may be like saw dust when one compares it to the fine spices roasted, combined and dry ground or wet ground in the traditional Indian traditions. Today one of the most famous entrée in the west consists of curry - a blend created mixing various different ground spices in right proportions with the water. However there are many delicacies in Indian recipes due to the inclusion of variety of spices.

Fresh ground spices are the order of the day in an Indian home and will be chosen according to the nature of the dish, season, individual and family. Some of the common Indian spices available are red chilli pepper, turmeric, black pepper, nutmegs, cloves and many more.

Other then the usage of spices in culinary, they are also used as medicine. Ancient Ayurvedic texts prescribe the herbs and spices for curative and therapeutic functions. Ayurvedic scripts dating back to 3000 years, list the preventive and curative properties of various spices. Looking at curative properties of some of the spices - Ginger prevents dyspepsia, garlic reduces cholesterol and hypertension and fenugreek is a good resistance builder and with pepper often serve as antihistamines, turmeric is used for stomach ulcers and for glow of the skin.

Spices have been used to make the food last longer in the days when refrigeration was absent. And even today in some remote parts of India where electricity is not available, spices are used in food for preservation.

In India the western after dinner mint is substituted by the fragrant spices such as fennel, cardamom or cloves. Effective mouth fresheners, they aid digestion, prevent heartburn and curb nausea. Others such as asafoetida and ginger root, have been known to counteract flatulence and colic, and are added to lentils, a must with every Indian meal.

The JR3070CT has a long 1-1/4-inch stroke for faster cutting with 0-2,800 strokes per minute (SPM) and a variable speed dial with six different preset speeds to match the speed of the saw to the application. The unique clutch system extends the tool life by protecting the gears should the blade bind. It also has orbital action with four settings to choose from for high speed cutting.
